About the Chef: Thomas Hewitt
Before opening Southern Caribbean Restaurant, Chef Thomas Hewitt's interest in and passion for cooking started at a very young age while growing up in Manchester Parish on the island of Jamaica. Inspired by his mother, who told him, "With cooking, you must know what is good and what is bad. Learn that, and you will know how to cook anything."
As Thomas excelled, his passion for cooking Jamaican-style Caribbean food never left him. So in March 2012, Thomas and his wife, Lillian, opened their Jamaican food restaurant in Fairfield/Birmingham—Southern Caribbean Restaurant! Here they bring a wealth of expertise combined with a love for good-quality, traditional Caribbean food.
